The traditional Griddle or Bakestone was once an everyday tool in kitchens across Wales. In many parts of Wales and counties alike, cooks proudly admit to its regular use and what they mean is an old, heavy black cast iron one which has perhaps been in the family for generations.
The portable cooking stone, and then iron bakestone was the follow on from the early, primitive method of baking on a hot hearth or flagstone, which had first developed as a thin slab built into a wall with room for a fire beneath. From being basically a flat piece of metal it has developed little over the years apart from having a handle of some sort added.
They work well on any heat source and perform well on any gas or electric cooker or even an Aga.
Traditional Bakestone
This has been traditionally the shape of welsh Griddles for over 100 years as it replaced the old English style of a wire hanging handle to hang over an open fire to cook scones and English muffins.
Oval
The oval shaped bakestone has been traditionally associated with cooking breads.
